You could add games for them to play during downtimes during the conference or other interesting information about the city the conference takes place in or about your company as a whole. You can update the app over time to keep conference-goers updated on changes to your products or services too.

And those that can't attend can still feel like they are a part of the meetings because they will receive real-time information and video. It can actually extend your conference's reach that way too.
